Chipotle Ranch Black Bean Fiesta Salad Cups
This isn’t your typical salad. These Chipotle Ranch and Black Bean Fiesta Salad Cups are easy, light and refreshing.

- 1 can black beans drained and rinsed (540ml)
- 1 red bell pepper diced
- 340 g chopped coleslaw/salad mix 1 package
- 1/3 cup chipotle Ranch Dressing
- sour cream or plain Greek yogurt for serving
- 1/4 cup chopped parsley for serving
To a bowl, add coleslaw/salad mix, black beans and diced red bell pepper. Pour salad dressing overtop and mix to combine. Store In the fridge until ready to serve and assemble.
To a greased muffin tray, add wonton wrappers and fold the edges to create a cup. Brush with oil prior to placing in the oven.
Bake until wonton wrappers are crisp and golden in colour. Remove from oven and allow cups to cool.
When ready to assemble, add a couple tablespoons of the black bean salad mixture then top with sour cream or Greek yogurt and chopped parsley. Enjoy!
