Chipotle Ranch Black Bean Fiesta Salad Cups Recipe
Makes: 15 cups
Prep Time: 15 minutes
Total Time: 15 minutes
INGREDIENTS:
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 (340g) pack chopped coleslaw/salad mix
- 1/3 cup Chipotle Ranch Dressing
- Sour cream or plain Greek yogurt (for serving)
- ¼ cup Chopped parsley (for serving)
INSTRUCTIONS:
- To a bowl, add coleslaw/salad mix, black beans and diced red bell pepper. Pour salad dressing overtop and mix to combine. Store In the fridge until ready to serve and assemble
- To a greased muffin tray, add wonton wrappers and fold the edges to create a cup. Brush with oil prior to placing in the oven. Bake until wonton wrappers are crisp and golden in colour. Remove from oven and allow cups to cool.
- When ready to assemble, add a couple tablespoons of the black bean salad mixture then top with sour cream or Greek yogurt and chopped parsley. Enjoy!
