Sheet Pan Crispy Gnocchi with Mushrooms, Peas and Bacon.

One sheet pan is all it takes for this wholesome and flavourful meal to come together! A mostly hands-off dinner that combines the flavours of mushrooms and bacon.
Ingredients
  • 227 grams white or brown mushrooms, sliced to ¼” thick
  • 500 grams store-bought gnocchi
  • 225 grams thick-cut bacon* (or 4 slices), cut into ½” pieces (* see note above)
  • 2 cups frozen peas
  • 2 large cloves garlic
  • ½ tsp dried thyme
  • ½ tsp ground black pepper
  • ½ tsp kosher salt
  • 2 tsp lemon juice
Instructions
  1. Preheat oven to 425°F and line a baking sheet with parchment paper or foil.
  2. In a large bowl or on the baking sheet, toss together mushrooms, gnocchi, bacon, peas, garlic, thyme, black pepper, and salt.
  3. Bake for 20 minutes and then stir/flip ingredients. Bake for another 10-15 minutes or until gnocchi and bacon are golden brown and crispy.
  4. Add lemon juice on top and stir to blend flavour in.
  5. Serve immediately.
