Grandma Simpson's Snack Attack Lentil Cookies

- ½ cup margarine
- ½ cup packed brown sugar
- ¼ cup white sugar
- 1 egg
- 1 tsp vanilla
- ⅔ cup white or whole wheat flour
- ½ tsp. baking soda
- 1 cup rolled oats
- ½ cup well cooked, drained lentils (Lairds)
- ½ cup cooked wild rice (optional)
- ½ cup raisins
- ½ cup sunflower seeds
- Preheat oven to 375 F.
- Cream margarine, sugars, eggs, and vanilla together until fluffy.
- Stir in flour, soda, lentils, rice, raisins and sunflower seeds.
- Drop by the teaspoonful onto greased baking sheet, allowing space for spreading.
- Press flat with floured fork.
- Bake at 375 F for 8 – 10 minutes.
- Carefully lift off pan; cool.
